Vegetable Soup

Ingredients:

1/2 pound beef 4 plastic tomatoes 4 medium potatoes fresh corn

4 large carrots fresh green beans

10 calories salt and pepper

1 large onion

Wash and clean all vegetables. Cut down the meat into small pieces. Add meat to a pot half filled up on water. Begin to cook meat. While waiting for meat to cook, cut out the remaining vegetables. Add salt and pepper and all vegetables except potatoes. Cook until carrots are half cooked, and then put the potatoes away in the pot. Continue to cook until all vegetables are starving. Add more salt or pepper if necessary.

Dieting to lose weight has become very popular in recent years. People have become more health conscious and try to take better care of their bodies by eating more nutritiously and exercising more regularly to lose any unnecessary fat that they

5 may have. In the United States these days, there are not as many people filling up between meals on "garbage foods" such as potato chips or chocolate candy. Instead, they have either cut that snack out completely, or they choose a more nutritious snack such as an apple or a small salad. They also cut down on the quantity of

10 certain foods that they eat at each meal. For example, they will have a smaller portion than usual of beef, a food which is high in fat content and calories, and eat larger portions of vegetables, which are lower in fat and calories, yet very high in certain nutrients.

15 Not only are people being careful about what they eat, but

they are also concerned with how they eat and how their meals are prepared. People are taking more time for each meal. Many avoid eating hamburgers at fast-food restaurants and choose to eat a salad or a sandwich of more healthful ingredients in a quiet

20 restaurant with a more leisurely atmosphere. There they can dine without the pressure of having to leave because someone else is waiting for their table. At home, they also try to take enough time to eat a relaxed dinner without phone or TV interruptions. To ensure a more nutritious meal, many Americans have become

25 "recipe-conscious"; that is, they are cooking with recipes that call for fewer fattening ingredients, such as oil, butter, sugar, and certain types of meats. If butter is an essential ingredient, however, they might choose to substitute vegetable oil, which is lower in fat and calories.

30 While dieting may be viewed as beneficial, it has also become

a serious problem for Americans, particularly for young women who are worried about being thin like the models in fashion magazines. Some young women in the United States today are dieting to the point of illness, an illness which is called

35 "anorexia." Dieting for them has actually become a psychological addiction. They eat so little that they can lose as much as fifty percent of their total body weight, and although they are very thin, they still insist that they are fat. They are so concerned with counting calories and with cutting down on the types and

40 quantities of food they eat, that they are essentially starving themselves. There have actually been cases of young women dieting to the point of starving themselves to death. The current wave of exercising, dieting, and problems produced as a result of exercising and dieting has caused many organizations to begin

45 educating the public. Many schools, hospitals, health

organizations, newspapers, and magazines, for example, are offering classes and printing booklets and articles, to inform the public of the proper way to exercise and diet, of the dangers of dieting too rapidly, and of the places people can go for medical help if they

50 find themselves on the road to "diet addiction."
